Spirulina (Arthrospira platensis) is a microscopic, spiral-shaped blue-green algae that grows naturally in warm, alkaline lakes. It is harvested, dried, and ground into a fine, deep blue-green powder with an earthy, slightly sea-like flavor. A small amount turns smoothies, juices, and smoothie bowls a rich green.
Traditional Use: The Aztecs harvested spirulina from Lake Texcoco in central Mexico and dried it into cakes, and the Kanembu people around Lake Chad in Africa have traditionally harvested it and dried it into cakes called dihé, still eaten today.
